Hi Everyone! Happy Wednesday, the end is near!!


This week I will be sharing the lovely, Damaris Phillips, a southern girl from Louisville, KY. She graduated from Jefferson Community and Technical College with a degree in Culinary Arts and now teaches at the same school. How awesome is that!! Damaris also won the ninth season of the Food Network series, Food Network Star. Now she currently stars in her own show on the network entitled, "Southern At Heart". It is a perfect blend of southern recipes that are fun and achievable. The one that  I found for today is definitely something that will be a repeat in our kitchen. So take a look and tell me what recipes you guys will be cooking up this summer!

New Potatoes with Feta

New Potatoes with Feta

Next Recipe
2 1/2 pounds new potatoes, quartered
1/4 cup coconut oil
3 sprigs thyme, leaves picked and chopped
Kosher salt and freshly ground pepper
1/2 cup crumbled feta
1/4 cup thinly sliced green onions
Preheat the oven to 425 degrees F. Place a baking sheet in the oven to preheat while you prepare the potatoes.

Toss the potatoes with the oil and thyme on a baking sheet and season liberally with salt and pepper. Roast the potatoes until golden brown and crisp on the outside but fork-tender on the inside, 15 to 18 minutes. Transfer to a large bowl and toss with the feta and green onions. Serve immediately.
