Share-A-Chef Wednesday

Hi Everyone! I don't know about you guys but the weather here in NY is HOTT! So this week consisted of a lot of inside activities and blogging has been one I have been super busy with! This week I will be sharing a chef that I actually found on a newly discovered blog! Her name is Samantha and the name of her blog is Five Heart Home . Samantha is a wife, proud mama, a first born, and a Type-A Perfectionist. She has been blogging since her first child and she admits that she is not a big talker but she loves writing.
I was actually searching for recipes on Pinterest and I stumbled upon her site. After browsing through her amazing blog I discovered her German Potato Salad recipe. I was hooked from then on and I immediately wanted to get all the ingredients. So I hope you all go over and check out Samantha's blog and tell her I sent you!

German Potato Salad
Yield: 4 to 6 servings
German Potato Salad
With warm, tender red potatoes and a sweet, tangy dressing loaded with bacon and garlic, this German Potato Salad is a perfect side dish for any occasion, from a grilled dinner to a summer holiday potluck.
Ingredients
  • 2 pounds red potatoes 
  • 1 teaspoon salt (for boiling potatoes)
  • 12 ounces bacon
  • 1/3 cup apple cider vinegar
  • 3 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 1 tablespoon minced fresh garlic (about 3 large cloves)
  • 1/2 cup chopped fresh parsley
Directions
  1. Scrub potatoes and cut any very large potatoes in half so that all potatoes are of approximately equal size. Place potatoes in a large pot and cover with cold water. Bring to a boil and stir in 1 teaspoon of salt. Reduce heat and simmer potatoes for 15 to 20 minutes or until potatoes are tender when stabbed with a fork. Drain water. Leaving potatoes in pot, return pot to still-hot (turned off) burner. Leave lid off of pot and allow potatoes to steam dry for a few minutes.
  2. Set a large pot over medium heat and use kitchen shears over pot to cut bacon strips into approximately 1-inch pieces. Cook bacon, stirring occasionally, until crispy. While bacon is cooking, cut potatoes into 1/2-inch thick slices. Cut any extremely large slices in half. Set aside. Once bacon is done, remove pot from stove and use a slotted spoon to remove bacon to a bowl while leaving bacon grease in the pot (I had about 1/4 cup).
  3. To the bacon grease, slowly and carefully add vinegar, sugar, Dijon, salt, and pepper. Place pot back on burner, bring mixture to a simmer, and stir for a couple of minutes. Stir the minced garlic into the mixture and cook for 30 seconds to 1 minute, or until garlic starts to turn a light golden. Remove pot from heat and toss in the sliced potatoes, gently mixing until potatoes have absorbed all of the liquid. Carefully fold in the cooked bacon pieces and chopped parsley. Transfer potato salad to a serving dish and serve hot or warm. Potato salad should not sit at room temperature for more than two hours before refrigerating any leftovers.
Tips, Tricks, & Variations
Make sure that the pot is off of the burner and the bacon grease has slightly cooled before slowly and carefully adding the vinegar (in order to prevent the mixture from potentially bubbling up).

Tuesday Ten: Date Night Ideas

Hello there....As the summer reaches it's midpoint I begin to think about my Fall Schedule and everything that I am already committed too! Subbing and working on my masters is going to keep me pretty busy. So for this week I wanted to talk about fun ways to incorporate Date Nights into our already busy, or soon to be busy schedules! I feel like our lives are so hectic sometimes that it is hard to actually commit to time outside of our regular day-to-day routine. This is why it is so important to not only set time aside, but to make your time together worth it! Date Nights don't have to be all the bells and whistles, just a time to connect, and enjoy one another! So, I have gathered ten fun ways to enjoy your next date night.....

1. Take A Walk
The husband and I have been doing this on a daily basis since I am home more often this summer! It is a great way for us to talk about our day and to discuss things in our lives! We always have the best conversations during our walks!!

2. Go For Ice Cream or Frozen Yogurt
During the Summer Time going for ice cream is such a fun way to unwind from the hot day and just relax and enjoy each other's company! I know for Gregg and I we usually work outside all day and end the evening with a trip to the ice cream place! It is the best way to end the day!

3. Go On A Day Trip
Day Trips are the best! We have done quite a few in the years we have been together and it's such a nice way to venture out from the norm and spend time together in a new place! Whether it was shopping for the day and stopping for lunch, or going to the lake to swim and BBQ, we always had the best time! Exploring new and different places is such a fun and unique way to create memories!

4. Take A Sunday, Or Any Day, Drive
When I first got married the husband and I did a lot of Sunday Drives! It all started by Gregg asking, "hey do you want to go for a drive?" I was like "Sure!" From then on, I began to realize how relaxing it was, especially if your driving during the fall or summer time! There is just so much to look at and I always loved to stop and snap pictures of gorgeous spots we would find along the way!

5. Stay In For A Movie
Sometimes staying in can be just as fun as going out! I love picking out a movie together, making some popcorn, and snuggling up on the couch. 

6. Free Concerts
We are actually going to see Cole Swindell next month at our State Fair! It is a free concert and it is something we can enjoy together without spending tons of money. So we make a day out of it and head to the fair, walk around, try some unique foods, check out the vendors, and then we end the night with the concert! It is such a fun day for the two of us!

7. Go To The Park and Have A Picnic
I recently stumbled across quite a few nice parks in our area and I really want to try this picnic thing! I think it is a brillant way to connect and enjoy the outside! Pack a delicious lunch and head out to a park near you! 

8. Take A Class Together
I always wanted to take a self-defense class and the hubby actually showed interest in doing it as well. So I definitely want to get that going and I know it has the potential to be beneficial in so many ways! 

9. Watch A T.V. Series Together
Okay, so do you know that moment when you are watching a show and your husband comes in and surprisingly starts watching it too?? Has that happened to any of you guys?? Well it did in our house and the show of choice was "Married At First Sight". I began watching it a couple episodes in and before you know it, Gregg was asking me to DVR it! So, yes, we watched the rest of the season together! It was fun though because we shared our opinions on everything and it was a way for us to just relax and enjoy some senseless tv!

10. Act Like A Kid Again
We actually did this right before we started dating way back when! We went sledding with my sister Lisa. It was so much fun and we ended the afternoon with a cup of cocoa at a local diner! We all had so much fun and we made great memories! It is the little things in life that mean the most! Take advantage of these moments because they tend to get lost in mix of our everyday lives!!

Share-A-Chef Wednesdays


I am so excited to share this recipe with you all this week because it is definitely going to be on repeat  in my kitchen. This week I am sharing a recipe from Sandra Lee, an Emmy-nomiated expert in all things kitchen and home. Sandra creates memorable meals, lovely homes, and creative crafts and shows how to entertain in the easiest and most perfect way! She is the host of The Food Network's "Sandra's Money Saving Meals", in which she helps viewers make delicious, budget-friendly meals using fresh ingredients.  She also stars in another show "Semi-Homemade Cooking", also on The Food Network. Sandra is a well-known philanthropist and has a strong commitment to charity and community service. As of 2012, she  has launched several lines of home and garden products. Her home products are entitled, "Sandra By Sandra Lee". This week I will be featuring her "Chicken Cutlet Sandwich with Herb Mayonnaise".

Chicken Cutlet Sandwich with Herb Mayonnaise

Chicken Cutlet Sandwich with Herb Mayonnaise

Ingredients
1 1/2 pounds bone-in chicken breast
Kosher salt and freshly ground black pepper
Canola oil, for brushing chicken
1/2 cup mayonnaise
1 tablespoon spicy brown mustard
1 lemon, zested and juiced (reserve the juice for the Blueberry Scones recipe)
2 tablespoons chopped parsley leaves
Fennel fronds from 1 bulb, chopped
1 baguette, about 16-inches long
1/2 medium red onion, thinly sliced
1/2 small head lettuce, shredded
Directions
Heat the grill or a grill pan over medium-high heat. Remove the skin from the chicken and remove the bones. Slice the breast diagonally across to make 4 thin pieces. Pound the chicken lightly between 2 pieces of plastic wrap. Season the cutlets with salt and pepper, to taste, and brush them with a little oil. Grill the cutlets until cooked through, about 4 to 5 minutes per side. Remove from the pan and let cool.

Put the mayonnaise into a bowl along with the mustard, lemon zest, parsley, and fennel fronds and whisk to combine. Check the seasoning and add salt, and pepper, to taste. Cut the baguette in half lengthwise. Spread the herb mayonnaise on the bottom half. Top with the chicken, onions, and lettuce. Spread the remaining mayonnaise on the other half and put it on top. Cut the sandwich into 4 pieces and wrap well in waxed paper or plastic wrap.

Someone New: Interview with Jordyn from The Fairy Princess Diaries

Can you tell our readers about yourself and your blog?

Hello! My name is Jordyn, I'm a girly-girl introvert with a love for daisy chains and hopeless coffee addiction. My blog The Fairy Princess Diaries is a compilation of introspective reflection, fashion and retellings of my awkward life. It's generally written with Taylor Swift playing softly in the background and an copious amount of caffeine in my blood stream.

Describe how did you first get into blogging?

I had transferred schools and was honestly feeling really lonely living in a new city with a very oppressive boyfriend (not my current boyfriend!). I needed an outlet, a place to feel heard and a space I could be 100% me 100% of the time. My initial blog posts are pretty funny to look back on but I think every day my blog becomes more of the space I envisioned for myself (though it will never be perfect and will always have cringe-worthy moments).

Can you tell me some of your strengths that really helped you in blogging?

Organization and constant brainstorming have really helped with The Fairy Princess Diaries. I'm not one of those super put together bloggers with an editorial calendar mapped out for months but I do try to plan out my blog posts a week or so ahead of time. I usually map out posts in my planner a week ahead of time but allow myself room to adjust if a topic compels me. 
I also believe in remaining positive towards readers and the blogging experience despite occasional negativity. There will always be negativity out there but I truly believe it is more beneficial to channel sunshine and happiness rather than engaging in long rants about "haters" or whatever. Engaging the negativity just seems immature. Kindness towards others goes a long way in life and remains true in blogging.

 How would you describe your blogging style?

I don't necessarily have a specific niche such as fashion or food but I do attempt to maintain a congruent voice and message throughout my posts. I like to think my blog embodies authenticity, staying true to yourself and loving who you are as you push yourself to keep growing.

What do you think is the best strategy that worked well for you to get more traffic to your blog?

Hands down engaging with other bloggers. I'm really bad at self promotion via social media and most of my posts aren't pin-worthy. I love to befriend other bloggers and really get to know them on a friend-level. Putting effort into reading other blogs and thoughtfully engaging has definitely helped my own blog. People can see through someone who only cares about marketing their blog all the time but if you actually care about the writing someone is pouring their own heart & soul into they usually respond well in my experience.

 How do you want to improve yourself in the next year?

Ooh I love this question! Self Improvement is so critical to living a fulfilling life to me. I have so many goals-I want to progress in my career, I want to run a marathon, I want to dedicate more time to blogging and I want to be a more selfless and giving person. For me it all boils down to living every day intentionally, I never want to be a person that just allows life to passively "happen" to her.

 How do you motivate yourself to keep the blog up
and running?

I hate to admit this but I'm naturally a very rigid person. I live by my "to-do" list so for me motivation just comes from the internal expectation I have set for myself. I expect myself to blog consistently and even though I know readers don't mind if I skip a day or two not writing on a daily basis really eats away at me. I need to write or I go insane; all of the chaos in my mind needs an outlet!

As I begin to look back at this year, thus far, and remember all the different circumstances I have been through, I started to realize just how much I am grateful for. The hubby and I have been through a difficult time and we are slowly working through it. This, among other things, has allowed me to really think about the people in my life and the things that I am grateful for. Photo Diary: Mother Daughter Day!

Hi Everyone! Today my mother and I ventured out for a delicious breakfast, via Cracker Barrel, then we did a bit of shopping and then ended our day at the movies!
