Blog Update

Hey guys!! I just wanted to get on here and explain my absence. For the past few weeks the hubby and I have been going through some things and we have just been caught up in it all. We also have been trying to enjoy the holidays and our families. So, in lieu of all of THAT, I have been MIA from my blog. I want to tell you all that I am so grateful and appreciatitive of everyone who takes the time to stop by my blog. It really means the world to me! With that being said, I will be BACK in the new year! It will be an exciting year for my family as well as the blog. I hope all of you have a wonderful Christmas and a Very Happy New Year! I will talk to all very soon!!

Here in Upstate NY we have been having some crazy warm weather so it hasn't really felt like Christmas. I am hoping and wishing for a White Christmas in these parts. Share-A-Chef

Happy Hump Day Everyone! This past weekend I went to the in-laws and we created homemade ornaments for the holidays. We also made some Peppermint Bark, which was delicious by the way and so easy to make! So this week I went searching for recipes that I thought you would enjoy! I stumbled across Bright, Bold, and Beautiful, a blog created by Laura Trevey, a maker, a watercolor artist, a content creator and a Doer. Her blog consists of DIY, Home Decor, and Design Inspiration. I hope you enjoy her recipe and I would love to hear if you create it and have it during your holiday celebrations!

Peppermint Bark

Ingredients:
  • 12 ounces white chocolate
  • 12 ounces dark chocolate
  • 1/2 cup crushed peppermint candy 
Instructions:
  • Line a 9×12 pan with parchment paper.
  • Melt the dark chocolate microwave 20 seconds stir and repeat until you have a smooth consistency.
  • Pour the melted dark chocolate on the parchment paper, spread the chocolate out until it is about 1/3″ thick.
  • Melt the white chocolate, using the steps above.
  • After the chocolate is smooth, pour it on top of the dark chocolate – trying to make the layers the same thickness. (it’s best to do this step while the white chocolate is still very soft — I’ve had them separate when I broke them into pieces, I think the layers “stick” together better if the white chocolate has not hardened).
  • Place the pepermints into a ziplock bag and crush the mints. While the white chocolate is still melted sprinkle on top.
  • Let the chocolates harden in the refrigerator for 2 hours, then break the candy into pieces. This needs to be stored in the refrgerator if you live in a warm/humid climate.

Share-A-Chef

Happy December Everyone!! I am so excited for this very special month! I figured a Christmas Cookie would be perfect for my first Share-A-Chef Recipe for December. I seriously want to do a Cookie Swap Party, have you guys ever done one?? It seems like so much fun! Anyways, I found this recipe via Taste of HomeThe recipe is for Mint Chocolate Wafers!! OMG, OMG! You can add christmas colored sprinkles or crumbled candy canes! I really hope you enjoy this recipe and I would love to hear about your holiday cooking traditions!

Ingredients

  • 1 egg
  • 1/3 cup water
  • 3 tablespoons canola oil
  • 1 package chocolate fudge cake mix (regular size)
  • 1/2 cup cake flour
  • COATING:
  • 4 cups (24 ounces) semisweet chocolate chips
  • 1/4 cup shortening
  • 1/2 teaspoon peppermint extract
  • Sprinkles




Directions

  1. In a large bowl, beat egg, water and oil until blended. Gradually beat in cake mix and flour.
  2. Divide dough in half. Shape each into a disk; wrap in plastic wrap. Refrigerate 2 hours or until firm enough to roll.
  3. Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on greased baking sheets.
  4. Bake 8-10 minutes or until firm. Remove from pans to wire racks to cool completely.
  5. In top of a double boiler or a metal bowl over hot water, melt chocolate chips and shortening; stir until smooth. Stir in extract. Spread cookies with chocolate mixture. Place on waxed paper-lined baking sheets. Decorate with sprinkles. Refrigerate until set. Yield: 10 dozen.
